Francis Mallmann brought Patagonian fire to Faena's red and gold theater of a hotel, where an open hearth and parrilla drive the menu. Whole fish, scallops and towering parrilladas emerge smoky and charred, best eaten on the veranda facing the ocean garden. Dress the part, since the house asks for elegant chic and the crowd usually exceeds it.
