Undulating rings of wood curve overhead like ripples on a pond, drawing every eye to the itamae at Hiyakawa's counter. The kitchen caps service at about fifty meals a night, sourcing fish from Tokyo's Toyosu market and grating fresh wasabi to order. Book the omakase, then watch for the sugata-mori, whose fried fish skeleton returns later as a crackling encore.
